Alfred Fabian Hess was an American physician and nutrition researcher whose controlled clinical studies helped establish the dietary causes and cures of scurvy and rickets, showing that orange juice prevented infantile scurvy and that cod-liver oil and ultraviolet light prevented rickets. This work was central to the discovery of vitamins C and D and to the near-elimination of both deficiency diseases. He was Jewish, born into a New York Jewish family.
