Moses Kunitz was a biochemist at the Rockefeller Institute who pioneered the crystallization and purification of enzymes and proteins, isolating and crystallizing trypsin, chymotrypsin, ribonuclease and other key molecules. His methods established that enzymes are proteins that can be obtained in pure crystalline form. Born into a Jewish family in the Russian Empire, he emigrated to the United States.
