Aviv Wolff is recognized among Israeli contributors to Israel & Modern Innovation — Co-founder (2019) and chief executive of Remilk, the Israeli company that makes cow-identical milk proteins by fermentation, the first approved for sale in Israel (2023)
Origins and early life
Aviv Wolff's grandfather was a dairy farmer and much of his family grew up in Israel's agricultural north; he himself spent eight years as an officer in a special forces unit of the Israeli army.
Work and career
After his release he chose to skip university and go straight into business, finding success in cybersecurity, until he felt that something was missing. In 2019 he founded Remilk with the biochemist Ori Cohavi, in the first cohort of Tel Aviv University's JumpTAU accelerator, to make real milk proteins without cows. The company uses yeast-based fermentation to produce milk proteins identical to those of cows, free of lactose, cholesterol, hormones and antibiotics, and it has raised more than 150 million dollars from international backers.
After clearance in the United States and Singapore, Israel's Ministry of Health in April 2023 made Remilk the first company allowed to market animal-free milk protein in the country, a decision Wolff called a defining moment. When he was called up for reserve duty after 7 October 2023, with more than a third of the staff, he says, those who remained kept the work going and sent food and care packages to soldiers and displaced families.
In 2026 its milk, launched with the dairy company Gad and certified kosher pareve, reached Israeli supermarket shelves and cafés. No source states his Jewish identity in so many words: the Jerusalem Post placed him 41st in its 2023 list of the fifty most influential Jews, and an Israeli founder's biography has little reason to mention it. He is here under the Israeli presumption the site adopted on 7 September 2026 and extended on 15 October 2026 to Ashkenazi surnames — a Hebrew given name, a life in Israel and a strong attested tie, here his years as a special forces officer and the founding of Remilk — which is a presumption and not a declaration, and which any contrary source overturns.
